The server periodically performs maintenance on the database tables. The maintenance processing allows the database to update statistics used to determine how to best access a given table. The maintenance processing will periodically process all tables for the server. And during other processing cycles, it will only process those tables that have changes such as inserts, updates, or deletes for records in that table.
